Lentil and Chickpea Tzatziki Bowls

Craving a delicious (and healthy) bowl that you can really fill-up on? These Lentil and Chickpea Tzatziki Bowls will do the trick! This tasty Greek dish is one of my favorite meals to make and is made with many hearty, whole ingredients. Try adding your favorite pickled veggies and hummus flavors to the top! I promise this meal will not disappoint!

Ingredients:

  • 1 cup brown rice
  • 1 cup brown lentils
  • 1 can chickpeas (drained and rinsed)
  • 1 whole carrot
  • 1/2 cucumber
  • 2 tbsp hummus
  • 1/2 cup chopped lettuce
  • 1 tbsp pickled radishes (or beets)
  • 1 tbsp sliced and chopped dill pickles
  • 2 tbsp vegan tzatziki dip (I use Trader Joe’s Vegan Tzatziki Dip)

Instructions:

  1. In a small pot, bring 1 cup brown lentils and 3 cups water to a boil. Once boiling, reduce to a simmer and let cook for 25-30 minutes or until tender. Add salt and pepper to taste.
  2. In another small pot, bring 1 cup brown rice (or rice of choice) and 2 cups water to a boil. Once boiling, reduce to a simmer and let cook for 20-25 minutes or until tender. Add salt and pepper to taste.
  3. Drain and rinse chickpeas. Air fry for roughly 10 minutes at 390 degrees or until slightly crispy and browned.
  4. Chop and slice peeled carrot. Cook in a pan until tender and slightly browned. Add salt and pepper to taste.
  5. In a large serving bowl, combine a scoop of cooked rice, scoop of cooked lentils, scoop of roasted chickpeas, cooked carrots, sliced cucumber, chopped lettuce, chopped dill pickles, and pickled radishes (or beets). Top bowl with a scoop of hummus and a generous portion of vegan tzatziki. Enjoy!
