It’s cookie time! With the holiday quickly approaching, it’s time to break out this delicious Peanut Butter Chocolate Chip Cookie recipe.
Ingredients:
- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 cup white sugar
- 1/2 cup light or dark brown sugar
- 1 ripe banana (can replace with 1/4 cup sugar if preferred)
- 1.5 cups semi-sweet or dark chocolate chips
- 3/4 cup vegan butter
- 1 cup creamy peanut butter
- 2 cups instant oats
- 2 tsp vanilla extract
- 2 tbsp ground flaxseed
Instructions:
- In a small bowl, mix 2 tbsp of ground flaxseed with 6 tbsp water. Let set for 10-15min until the mixture starts to thicken.
- In a medium bowl, whisk the flour, baking powder, and salt together.
- In a separate large bowl (hand or stand mixer recommended), beat the butter until smooth. Add granulated sugar, brown sugar, and banana. Beat on medium speed until creamed, about 1-2 mins.
- Add the flax egg, peanut butter, and vanilla. Mix until combined.
- Add the dry ingredients to the wet ingredients and mix on low, scraping as you go.
- Add in oats and chocolate chips, mix on low.
- Chill the dough for 20-30min.
- Preheat oven to 350 F. Line baking sheet with parchment paper or aluminum foil.
- Scoop dough, roughly 2 Tbsp per cookie, and flatten down with spatula or fork until desired thickness is met.
- Bake for 11-13 min, until lightly browned on sides, center should still look very soft.
- Allow to cool on baking sheet for a few minutes before transferring to a cooling rack. Enjoy!
