Peanut Butter Chocolate Chip Cookies

It’s cookie time! With the holiday quickly approaching, it’s time to break out this delicious Peanut Butter Chocolate Chip Cookie recipe.

Ingredients:

  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup white sugar
  • 1/2 cup light or dark brown sugar
  • 1 ripe banana (can replace with 1/4 cup sugar if preferred)
  • 1.5 cups semi-sweet or dark chocolate chips
  • 3/4 cup vegan butter
  • 1 cup creamy peanut butter
  • 2 cups instant oats
  • 2 tsp vanilla extract
  • 2 tbsp ground flaxseed

Instructions:

  1. In a small bowl, mix 2 tbsp of ground flaxseed with 6 tbsp water. Let set for 10-15min until the mixture starts to thicken.
  2. In a medium bowl, whisk the flour, baking powder, and salt together.
  3. In a separate large bowl (hand or stand mixer recommended), beat the butter until smooth. Add granulated sugar, brown sugar, and banana. Beat on medium speed until creamed, about 1-2 mins.
  4. Add the flax egg, peanut butter, and vanilla. Mix until combined.
  5. Add the dry ingredients to the wet ingredients and mix on low, scraping as you go.
  6. Add in oats and chocolate chips, mix on low.
  7. Chill the dough for 20-30min.
  8. Preheat oven to 350 F. Line baking sheet with parchment paper or aluminum foil.
  9. Scoop dough, roughly 2 Tbsp per cookie, and flatten down with spatula or fork until desired thickness is met.
  10. Bake for 11-13 min, until lightly browned on sides, center should still look very soft.
  11. Allow to cool on baking sheet for a few minutes before transferring to a cooling rack. Enjoy!
