Tis the season for warm and comforting food! Perfect for Thanksgiving or Christmas time, these Portobello Mushroom Steaks with Gravy would make the perfect holiday meal. Seasoned and grilled to perfection, portobello mushrooms have the same rich and earthy flavors of a steak. Paired with mashed potatoes and gravy, this meal becomes the ultimate comfort food for any holiday season. Try it out for yourself!
Ingredients:
- 2 large portobello mushroom caps (sliced)
- 1 bag of yellow baby potatoes
- 2 cups green beans
- 2 tbsp flour
- 1 cup stout beer
- 1 tsp of beefless bouillon
- 1 large sweet onion
- 1 clove garlic (minced)
- Soy sauce
- 1/2 cup oat milk
- 3 tbsp vegan butter
- 1 tsp garlic powder
- 1 tbsp dried parsley (optional)
Instructions:
- Boil potatoes in large pot until soft.
- To make the gravy, thinly slice onion and sauté (on med-high heat) for 15-20 minutes or until soft and beginning to brown. Add 2 tbsp of flour and stir frequently. Cook for 2-3 min until flour begins to brown. Add 1 cup of water, 1 cup of stout beer, beefless bouillon, 1 clove of minced garlic, and salt and pepper to taste. Increase heat until gravy begins to boil, reduce heat to simmer. Cook for another 20-30 min to let gravy reduce and thicken.
- Strain potatoes. Add back to large pot on low heat. Add oat milk, 2 tbsp vegan butter and mash the potatoes. Add salt, pepper, and 1 tsp garlic powder to taste. Optionally, add 1 tbsp of dried parsley to add some color to the potatoes. Turn off heat.
- Preheat large pan on medium heat. Slice portobello mushrooms into thick slices. Add 1 tbsp of vegan butter to pan, once butter is melted add mushrooms. Season with 1/2 tsp garlic powder, salt, and pepper. Cook mushrooms for 3-5 min on each side until golden brown. Once mushrooms are almost done add a few dashes of soy sauce and stir mushrooms.
- Steam green beans for 5-7 minutes, or until cooked to desired tenderness. Add salt and pepper to taste.
- Compose plate by adding a heaping scoop of mashed potatoes topped with mushroom slices. Pour a generous amount of gravy over both. Add green beans on the side. Enjoy!
