Craving something tasty but don’t feel like eating a heavy meal? This Barbeque-Crusted Tofu Salad with Sweet and Zesty Ranch is the perfect solution to an easy and quick lunch. Try adding your favorite lettuces, veggies, or toppings. I promise this salad will not disappoint!
Ingredients:
- 2 cups mixed greens
- 1/2 cup shredded red cabbage
- 1/4 cup shredded red onion
- 1/4 cup shredded carrots
- 1/4 cup chopped cherry tomatoes
- 1/2 block tofu
- 1/2 avocado (sliced)
- 1 tbsp chopped green onion
- 1/4 cup vegan ranch dip (from my own recipe)
- 1/4 cup barbeque sauce
- 1 tsp sesame seeds
Instructions:
- Slice tofu block into long pieces. Coat each piece generously with barbeque sauce and sesame seeds. Bake tofu pieces in an air fryer on 350 degrees for 12-15 minutes, or until sticky and crispy.
- In a small bowl, make the dressing by combining 1/4 cup vegan ranch dip with 2 tbsp barbeque sauce. Mix well.
- In a large salad bowl, combine mixed greens, shredded red cabbage, shredded red onion, shredded carrots, chopped cherry tomatoes, and sliced avocado. Top salad with baked tofu slices and chopped green onion. Mix dressing into salad and toss well. Enjoy!
