Hot summer days call for cool refreshing salads! This Zesty Lemon Quinoa Salad is the perfect combination of fresh and delicious. Made with multiple protein sources like roasted chickpeas, quinoa, pepitas, and sunflower seeds, this salad is also very filling. Enjoy it as a side-dish or as a main meal!
Ingredients:
- 2 cups mixed greens
- 1/4 cup chopped parsley (fresh)
- 1 tbsp chopped dill (fresh)
- 1/2 cup cooked quinoa
- 1/4 cup chopped cucumber
- 1/4 cup roasted chickpeas
- 2 tbsp pepitas
- 1 tbsp sunflower seeds
- 1/4 cup cooked beets
- 2 tbsp vegan feta crumbles (I use Follow Your Heart Feta Crumbles)
- 2 tbsp dried cranberries
- 1/2 lemon (juiced)
- 1/3 cup apple cider vinegar
- 1 tbsp honey
- 1 tbsp dijon mustard
- 2 tbsp avocado oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- In a large salad bowl, combine mixed greens, chopped parsley, chopped dill, cooked quinoa, chopped cucumber, roasted chickpeas, pepitas, sunflower seeds, cooked beets, feta crumbles, and dried cranberries.
- In a small mixing bowl, make the dressing by combining lemon juice, apple cider vinegar, honey, dijon mustard, avocado oil, salt and black pepper. Whisk well to combine.
- Pour desired amount of dressing over salad and toss to combine. Enjoy!
