Peanut Butter Banana Mini Muffins

I am always trying to find fast and easy breakfast options that I can grab quickly on my way out of the house in the morning. These Peanut Butter Mini Muffins are an ideal breakfast option when you’re on-the-go! Filled with healthy fats and protein, just a few of these muffins are the perfect way to feel full and satisfied all morning long. Try adding your favorite vegan protein powder or preferred nut butter for a different muffin flavor. I promise these mini muffins will be the best addition to your morning!

Ingredients:

  • 1 ripe banana
  • 3/4 cup peanut butter
  • 1 cup oat milk
  • 1 cup oats
  • 1/4 cup flax seed
  • 2 tbsp honey
  • 1 tbsp cinnamon
  • 1/4 tsp baking powder
  • 2 tbsp pb fit powder
  • pinch of salt
  • 3/4 cup mini chocolate chips (or cocoa nibs)

Instructions:

  1. Preheat oven to 380 degrees.
  2. Spray or butter mini muffin tin so that it becomes non-stick.
  3. In a large bowl, mash ripe banana until almost smooth with no lumps. Add peanut butter, oat milk, oats, flax seed, honey, cinnamon, baking powder, pb fit powder and salt. Mix to combine. Add chocolate chips and mix again.
  4. Scoop a tbsp of mixture into each mini muffin tin.
  5. Bake for 20-25minutes.
  6. Once finished baking, carefully remove mini muffins from tin and let cool on parchment paper. Enjoy!
