With summer quickly approaching, so are those backyard barbeques and parties! This Greek Pasta Salad is the perfect dish to share with all your friends. The best part about this pasta salad is that you can add whatever veggies you have in your fridge! Whether you’re hosting a party, or just looking to make a delicious lunch for yourself, I promise this pasta salad will not disappoint.
Ingredients:
- 1 box bowtie pasta
- 1/2 cucumber (chopped)
- 1 cup chopped cherry tomatoes
- 1 cup chopped green bell pepper
- 1 cup sliced kalamata olives
- 3/4 cup chopped pepperoncinis
- 3/4 cup vegan feta crumbles (I use Follow Your Heart Dairy Free Feta Crumbles)
- 1/2 cup Greek dressing (I like to use Michelle’s RawFoodz Organic Greek Glory Dressing. My homemade Greek dressing recipe is also listed in the instructions below.)
Instructions:
- Bring a pot of salted water to a boil. Once boiling, add noodles and cook for 10-12 minutes (or until tender). Strain and cool.
- In a large bowl, mix together chopped cucumber, chopped cherry tomatoes, chopped green bell pepper, sliced kalamata olives, chopped pepperoncinis, vegan feta crumbles, and Greek dressing. Mix and enjoy!
*To make your own Greek dressing, combine 1/4 cup olive oil, 1 minced clove garlic, 3 tbsp red wine vinegar, 1/2 tsp Dijon mustard, a squirt of lemon juice, salt, and pepper.
