I love a salad with some heat! This Buffalo Ranch Chickpea Salad is the perfect dish for those sunny Spring and Summer days. The spice of the buffalo chickpeas, combined with the creamy ranch dressing and freshness of the mixed veggies makes this the tastiest salad for any day. Make it your own by adding your favorite veggies or greens. Enjoy!
Ingredients:
- 1 can chickpeas (drained and rinsed)
- 2 cups mixed greens
- 1/4 cup shredded purple cabbage
- 1/4 cup shredded carrots
- 1/4 cup chopped cucumber
- 1/4 cup chopped celery
- 1/4 cup chopped cherry tomatoes
- 2 tsp chopped green onion
- 2 tsp vegan feta crumbles (I use Follow Your Heart Vegan Feta Crumbles)
- 2 tbsp vegan ranch (my own recipe)
- 3 tbsp buffalo sauce (I use Fresh Thyme Wild Buffalo Sauce)
Instructions:
- Drain and rinse chickpeas. In a small bowl, coat the chickpeas with 2 tbsp buffalo sauce and mix well. Air fry chickpeas for 15 minutes on 390 degrees, or until slightly crispy or golden brown and sticky.
- In a large salad bowl, combine mixed greens, shredded purple cabbage, shredded carrots, chopped cucumber, chopped celery, and chopped cherry tomatoes. Add cooked chickpeas. Add ranch dressing and 1 additional tbsp buffalo sauce. Toss well until all items are combined and coated with dressing. Top with chopped green onion and vegan feta crumbles. Enjoy!
