Looking for a tasty appetizer to serve at your next party? Try making these Mexican Fiesta Bites! These sweet potato pucks topped with guacamole, black beans, and sauteed veggies are also a perfect little late-night snack when you are craving something tasty yet healthy. Try topping them with your favorite veggies, salsa, or even pickled jalapeños for a little extra spice!
Ingredients:
- 1 sweet potato
- 1 avocado
- 1 can black beans (drained and rinsed)
- 1/2 red bell pepper
- 1/2 orange bell pepper
- 1/2 cup corn
- 1/2 sweet onion
- 1 tbsp chopped cilantro
- 1 lime
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 tsp onion powder
Instructions:
- Slice whole sweet potato into thin pucks. Drizzle them with a small amount of avocado oil and salt. Air-fry sweet potato pucks for 15-20 minutes at 380 degrees, or until fully-cooked/slightly browned.
- Make your guacamole by combining 1 avocado, juice of 1 lime, 1/2 tsp cumin, 1/2 tsp salt, 1/2 tsp garlic powder, 1 tsp onion powder. Mash and stir together.
- In a large skillet, add chopped red bell pepper, chopped orange bell pepper, and chopped sweet onion. Cook until tender. Add corn and black beans and cook for a few more minutes. Salt and pepper to taste.
- Top sweet potato pucks with a generous amount of guacamole. Top with mixed veggies, black beans, and corn. Sprinkle with chopped cilantro. Serve with salsa and pickled jalapeños on the side. Enjoy!
