This Mediterranean bowl is definitely what dreams are made of! Packed with protein sources like lentils, chickpeas, bulger, and hummus, this dish will leave you feeling full and satisfied for hours. This meal is comprised entirely of whole foods, making it an extremely healthy option as well as a tasty one!
Ingredients:
- 1/2 cup bulger
- 1/2 cup green lentils
- 1 can chickpeas (drained and rinsed)
- 1 cup finely chopped kale
- 1/2 cup chopped tomatoes
- 1/2 avocado (sliced)
- 2 tbsp hummus
- 2 tbsp chopped kalamata olives
- 1 tbsp red wine vinegar
- 1/2 tbsp honey
- 1 tsp turmeric
- 1/2 tsp garlic powder
Instructions:
- In a small pot, bring 1/2 cup lentils and 1 cup water to a boil. Once boiling, cover with a lid and reduce to a simmer. Let cook for 20-30 minutes (or until lentils are tender).
- In another small pot, bring 1/2 cup bulger, a pinch of salt, and 1 cup water to a boil. Once boiling, cover with a lid and reduce to a simmer. Let cook for 10-15 minutes (or until tender).
- In a small bowl, mix drained and rinsed chickpeas with honey, turmeric, and garlic powder. Add salt and pepper as desired. Stir well until every chickpea is coated. Place chickpeas in an air-fryer on 390 degrees and fry for 8-10 minutes (or until chickpeas are slightly golden-brown).
- In a large bowl, toss chopped kale with red wine vinegar. Massage into kale to tenderize the leaves.
- Once everything is done cooking and has been slightly cooled, combine lentils, bulger, chickpeas, kale, tomatoes, avocado slices, hummus, and kalamata olives. Drizzle a small amount of red wine vinegar. Mix and enjoy!
