
Do you have a major sweet tooth like me? If so, I have the perfect dessert for you! These Healthy Snickers Bars are the perfect combination of chewy and crunchy and have such a rich and decadent flavor. This sweet treat combines caramel-like soft Medjool dates, creamy peanut butter and crunchy cashews, all coated in smooth dark chocolate with sea salt. Who says you can’t be healthy and have dessert too?
Ingredients:
- Pitted Medjool dates
- Creamy (unsweetened) peanut butter
- Crushed cashews
- Dark chocolate chips (I use Enjoy Life Dark Chocolate Morsels)
- Sea salt
Instructions:
- Cut dates in half and remove pit (if not already de-pitted).
- Scoop creamy (unsweetened) peanut butter into each half of every date.
- Sprinkle crushed cashews (or peanuts) on top of the peanut butter.
- Melt 1/2 cup of dark chocolate chip in microwave-safe bowl on high for 1 minute. Stir. Microwave again for 30 seconds and stir again. Continue melting in 30 second intervals (stirring in between each interval) or until chocolate chips are completed melted and smooth.
- Drizzle melted dark chocolate over the dates and then sprinkle with chunks of sea salt. (Store in fridge to keep fresh and to harden chocolate coating). Enjoy!
