Healthy Snickers Bars

Do you have a major sweet tooth like me? If so, I have the perfect dessert for you! These Healthy Snickers Bars are the perfect combination of chewy and crunchy and have such a rich and decadent flavor. This sweet treat combines caramel-like soft Medjool dates, creamy peanut butter and crunchy cashews, all coated in smooth dark chocolate with sea salt. Who says you can’t be healthy and have dessert too?

Ingredients:

Instructions:

  1. Cut dates in half and remove pit (if not already de-pitted).
  2. Scoop creamy (unsweetened) peanut butter into each half of every date.
  3. Sprinkle crushed cashews (or peanuts) on top of the peanut butter.
  4. Melt 1/2 cup of dark chocolate chip in microwave-safe bowl on high for 1 minute. Stir. Microwave again for 30 seconds and stir again. Continue melting in 30 second intervals (stirring in between each interval) or until chocolate chips are completed melted and smooth.
  5. Drizzle melted dark chocolate over the dates and then sprinkle with chunks of sea salt. (Store in fridge to keep fresh and to harden chocolate coating). Enjoy!
