Feta Chickpea Salad with Lemon Vinaigrette

This Feta Chickpea Salad with Lemon Vinaigrette is the tastiest and most colorful dish that pairs well with basically any entree. Ingredients:

  • 2 cans chickpeas (rinsed)
  • 1/3 chopped red onion
  • 1/2 cup vegan feta (I use Follow Your Heart Dairy Free Feta Crumbles)
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds
  • 2 tbsp freshly chopped parsley
  • 1 lemon (juiced)
  • 3 tbsp avocado oil
  • 1 tsp honey
  • 1 tsp dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions:

  1. Finely chop red onion and parsley. Drain and rinse 2 cans of chickpeas.
  2. To make the dressing, combine lemon juice, avocado oil, honey, dijon mustard, garlic powder, salt, and pepper. Stir well.
  3. In a large bowl, combine rinsed chickpeas, chopped red onion, vegan feta crumbles, dried cranberries, sliced almonds, and chopped parsley. Pour the dressing over top and stir until all of the chickpea salad is coated. If desired, top with more freshly-chopped parsley. Enjoy!
