Vegan Apple Crisp

We recently visited our favorite local apple orchard, and in addition to the hot apple cider and donuts, of course we had to buy some apples too. One of my favorite Fall desserts is apple crisp with a scoop of vanilla ice cream! Nothing quite says Fall like some hot apple crisp on a chilly Autumn day. Feel free to add your favorite toppings and ice cream flavors. You simply cannot go wrong with this warm and delicious treat!

Ingredients:

  • 10 medium-sized apples
  • 3 tbsp sugar
  • 2 tbsp flour
  • 1/2 lemon (juiced)
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Vegan vanilla ice cream (for serving)

For the crumble topping:

  • 1/2 cup soft vegan butter
  • 1 cup flour
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 380 degrees.
  2. Peel and slice 10 medium-sized apples and place them into a large bowl. Sprinkle will 3 tbsp sugar, 2 tbsp flour, 2 tsp cinnamon, juice from 1/2 lemon, and 1/4 tsp nutmeg. Stir to combine all ingredients with the apple slices.
  3. In an 8×8 greased baking dish, spread apple slices evenly to cover the dish.
  4. In a separate large bowl, make the crumble by combining 1/2 cup vegan butter, 1 cup flour, 1 cup oats, 1/2 cup brown sugar, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp baking soda, and 1/4 tsp salt. Using your hands (or a fork), incorporate all ingredients together (you will have a semi-moist crumbly mixture once it is fully combined). Once combined, sprinkle the crumble pieces over the apples.
  5. Bake for 45 minutes, or until top has a lightly-browned and crispy appearance.
  6. Let cool for at least 10 minutes before serving. Add vegan vanilla ice cream and any other toppings you’d like. Enjoy!
