Embrace all of the autumn vibes with this tasty Fall Harvest Salad. Healthy and delicious, this salad is a combination of all of the fresh ingredients we love, as well as the warm flavors of Fall! Try it out for yourself!
Ingredients:
- Mixed greens
- 1/2 sweet potato
- 1/2 apple
- 1/3 cup chopped (cooked) beets
- 1/2 cup quinoa
- 1/4 cup chopped walnuts
- 2 tbsp crumbled vegan feta (I use Violife Vegan Feta)
- 1 tbsp pomegranate seeds
- 2 tbsp balsamic vinaigrette (I use the Fresh Thyme Organic Balsamic Vinaigrette)
Instructions:
- Wash and chop sweet potato into small cubes. Air fry (or bake) at 350 degrees for 15 minutes or until golden brown and tender.
- In a small pan, bring 1/2 cup raw quinoa and 1 cup water to a boil. Once boiling, cover with a lid and reduce to a simmer. Let simmer for 15 minutes or until completely cooked/tender. Let cool.
- In a large bowl, toss together the mixed greens, 1/2 sliced apple, chopped cooked beets, cooked quinoa, baked sweet potatoes, chopped walnuts, vegan feta crumbles, pomegranate seeds and balsamic vinaigrette. Enjoy!
