The Ultimate Veggie Sammie

Want a fun and tasty way to get more veggies into your diet? Try putting them in a sandwich! I don’t know about you, but in my opinion, everything is better with bread. Thinly-cut veggies paired with the perfect mayo-based spread make the best sandwich combination, and will have you saying “bye-bye” to the deli meats and cheeses. The best part about the Ultimate Veggie Sammie is that you can use whatever veggies you have leftover in your fridge, ensuring that none of your fresh produce goes to waste. Try it out for yourself!

Ingredients:

  • 1/2 package baby bella mushrooms
  • 1 large zucchini
  • 2 red bell pepper
  • 1/2 sweet onion
  • 2 slices sour dough bread
  • 1 clove garlic (minced)
  • 1 tbsp sriracha
  • 3 tbsp vegan mayo
  • 1 tbsp finely chopped pickled jalapenos
  • 1/2 lemon

Instructions:

  1. Chop red bell pepper into quarters, removing stems and seeds. Thinly chop 1/2 sweet onion into slices. Cut mushrooms into slices. Using a mandolin, slice zucchini long-ways into thin, flat strips (cardboard thickness).
  2. Preheat oven to 375 degrees. On a baking sheet, roast red bell pepper for 45-60 minutes or until soft. Add a sprinkle of salt and pepper.
  3. In a skillet, fry mushrooms and onions together with salt and pepper until browned. Once fully cooked, set mushrooms and onions aside.
  4. In a skillet, fry zucchini (add only a few slices at a time so that the pan is not overcrowded). Salt and pepper. Cook 1-2 minutes on each side or until lightly browned.
  5. Once all veggies are cooked, lightly sprinkle 1/4 lemon juice over all veggies.
  6. In a small bowl, combine vegan mayo, sriracha, diced jalapenos, minced garlic, and juice from 1/4 lemon. Stir to combine.
  7. On 2 slices of sour dough bread, spread mayo mixture onto each piece. On the outer-most sides of the bread, lightly coat with a small amount of oil or vegan butter. Add cooked veggies to inside of sandwich (stacking multiple layers of thinly-sliced veggies on top of each other). When sandwich is assembled, lightly fry in a hot skillet for a few minutes on each side, or until lightly golden-brown and toasted. Remove from heat and slice sandwich in half. Enjoy!
