Chickpea Cookie Dough Dip

What’s better than edible cookie dough for dessert?….How about HEALTHY cookie dough!? Packed with an abundance of protein, this Chickpea Cookie Dough Dip is the perfect late-night snack, dessert, or sweet treat to bring to your next party. Would you believe that it doesn’t contain any flour or eggs?! I can honestly say that this cookie dough dip does not disappoint.

(This recipe was inspired by Southern Curls and Pearls’ “Healthy Chocolate Chip Cookie Dip”).

Ingredients:

  • 1 can chickpeas (drained and rinsed)
  • 1/4 cup oat milk
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon baking soda
  • Pinch of salt
  • 1/4 cup brown sugar
  • 1 tsp pure maple syrup
  • 1/3 cup peanut butter
  • 1/3 cup vegan mini chocolate chips

Instructions:

  1. In a high-speed blender, blend chickpeas, oat milk, vanilla extract, baking soda, salt, brown sugar, and pure maple syrup together until smooth.
  2. Once smooth, add peanut butter and blend again until creamy.
  3. Place cookie dough spread in a small bowl. Stir in vegan chocolate chips. (*Top the mixture with more chocolate chips if desired*).
  4. Refrigerate for approximately 30 minutes (or more). Serve with graham crackers, strawberries, or apple slices. Enjoy!

(*OPTIONAL: Top with sprinkles, coconut shavings, or nuts for more variety!*)
