What’s better than edible cookie dough for dessert?….How about HEALTHY cookie dough!? Packed with an abundance of protein, this Chickpea Cookie Dough Dip is the perfect late-night snack, dessert, or sweet treat to bring to your next party. Would you believe that it doesn’t contain any flour or eggs?! I can honestly say that this cookie dough dip does not disappoint.
(This recipe was inspired by Southern Curls and Pearls’ “Healthy Chocolate Chip Cookie Dip”).
Ingredients:
- 1 can chickpeas (drained and rinsed)
- 1/4 cup oat milk
- 2 teaspoons vanilla extract
- 1/8 teaspoon baking soda
- Pinch of salt
- 1/4 cup brown sugar
- 1 tsp pure maple syrup
- 1/3 cup peanut butter
- 1/3 cup vegan mini chocolate chips
Instructions:
- In a high-speed blender, blend chickpeas, oat milk, vanilla extract, baking soda, salt, brown sugar, and pure maple syrup together until smooth.
- Once smooth, add peanut butter and blend again until creamy.
- Place cookie dough spread in a small bowl. Stir in vegan chocolate chips. (*Top the mixture with more chocolate chips if desired*).
- Refrigerate for approximately 30 minutes (or more). Serve with graham crackers, strawberries, or apple slices. Enjoy!
