Looking for the perfect entree for your next BBQ or summer cookout? How about a huge batch of lentil sloppy joes?! Filled with delicious barbeque flavor, these sandwiches are giving major summertime vibes. Packed with superfoods, such as lentils, bulgur, and quinoa, these sandwiches are not only tasty, but are super healthy and filling.
Ingredients:
For lentil sloppy joes:
- 1 cup green lentils
- 1/4 cup bulgur
- 1/4 cup quinoa
- 1/2 cup chopped celery
- 3/4 cup chopped carrots
- 1 sweet onion (finely chopped)
- 4 (finely chopped) jalapenos
- 1 tbsp Cajun seasoning
- 2 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp mustard powder
- 1 tbsp chili powder
- 1 tsp dried cumin
- 1 can diced tomatoes
- 1/2 cup ketchup
- 1/8 cup sriracha
- 1/3 cup BBQ sauce
- 1 tbsp soy sauce
- hamburger buns
For creamy vegan coleslaw:
- 2 cups shredded cabbage
- 1/2 cup vegan mayo (I use Follow Your Heart Avocado Oil Veganaise)
- 1/4 cup apple cider vinegar
- 1 tbsp sugar
- 1 tsp celery seed
Instructions:
- In a pan, boil 1 cup green lentils with 2 cups of water. Add 1 tsp of Cajun seasoning, and 1 tsp of garlic powder to the water. Once boiling reduce to a simmer and cook until tender (roughly 20 minutes).
- In a separate pan, boil 1/4 cup bulgur and 1/4 cup quinoa with 1 cup of water. Once boiling, reduce to a simmer and cook until tender (roughly 10 minutes).
- Finely chop carrots, celery, jalapenos, and sweet onion. (*Be sure to remove seeds from jalapenos*).
- In a non-stick skillet, cook chopped carrots, celery, jalapenos, and sweet onion until tender. When veggies are cooked, add 1 tsp of garlic powder, smoked paprika, mustard powder, chili powder, dried cumin, diced tomatoes, ketchup, sriracha, BBQ sauce, and soy sauce. Add tender bulgur, quinoa, and lentils. Stir to combine. (Add more ketchup or BBQ sauce as desired for flavor).
- To make creamy vegan coleslaw, combine shredded cabbage with vegan mayo, apple cider vinegar, sugar, and celery seed. Stir to combine.
- To serve, scoop a heaping spoonful of the lentil mixture onto a hamburger bun and top with a scoop of the coleslaw. Enjoy!
