I love sweets, but I often find myself looking at the labels on store-bought cookies or snacks and realizing that there are so many strange and unhealthy preservatives in them. There are too many ingredients that I can’t even pronounce, and the sugar content is astronomical. Wouldn’t it be great if we had a dessert that was delicious and healthy at the same time? I’ve got you covered! These peanut butter banana oatmeal cookies are the simplest and most delicious dessert (or snack) with a healthy (and minimal ingredient) twist. Packed with plant-protein and healthy fats, these cookies will satisfy your sugar craving, while leaving you full and happy!
Ingredients:
- 1 large ripe banana
- 2 1/2 cups dried whole oats
- 1/2 cup PB Fit Powder
- 1/2 cup peanut butter
- 1/2 cup oat milk (or non-dairy, unsweetened milk of choice)
- 1/4 cup pure maple syrup
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/3 cup semi-sweet mini chocolate chips
Instructions:
- Preheat oven to 350 degrees
- In a large mixing bowl, smash the peeled banana to a smooth consistency (trying to minimize any chunks).
- Once banana is smashed, add oats, PB Fit Powder, peanut butter, oat milk, pure maple syrup, cinnamon, and salt. Stir to combine well.
- Once combined, add semi-sweet mini chocolate chips. Stir to combine.
- Scoop spoonfuls of mixture and place onto a flat non-stick baking sheet, creating 2 inch diameter cookies. (There should be enough to make 10-12 cookies). (*If you don’t have a non-stick baking sheet, line sheet with foil and spray non-stick spray or coat with thin layer of vegan butter*).
- Bake for 20 minutes.
- Let cookies cool for at least 10 minutes before consuming. Enjoy!
(*For some extra plant-protein, try adding vanilla protein powder, sliced almonds, or pecans to the mixture. I also like to add raisins or dried fruit to my cookies on occasion.*)
