Looking to kick-start your morning with a big breakfast? Well, look no further. This soy chorizo and tofu breakfast wrap is the perfect combination of flavor, spice, and everything nice. Made with 100% vegan ingredients, this breakfast wrap is my favorite morning meal that I find myself craving all the time. The best part about this wrap, is that it is packed FULL of protein and healthy fats, keeping you full all morning long.
Ingredients:
- 1/2 block tofu
- 6 oz soy chorizo (I use 1/2 package Trader Joe’s Soy Chorizo)
- 1/2 avocado
- 1 large flour tortilla
- 1/4 cup dairy-free cheddar cheese shreds (I use Violife shreds)
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp India Black Kala Namak mineral salt
- 1 tbsp nutritional yeast
- 1/4 tsp ground turmeric
- 1 tbsp chipotle mayo (I use Sir Kensington’s Vegan Chipotle Mayo)
Instructions:
- Crumble 1/2 block of tofu (unseasoned) and fry in a non-stick skillet with added salt, pepper, India Black Kala Namak mineral salt (for “eggy” taste), nutritional yeast (for cheesy flavor), and ground turmeric (for egg-like color). Fry until slightly golden and hot.
- In a separate skillet, crumble 6 oz of soy chorizo and fry until hot and slightly crispy.
- Heat 1 large flour tortilla (either in microwave 30 sec. or on skillet) until warm
- Spread 1 tbsp of chipotle mayo onto tortilla, then add tofu, soy chorizo, sliced avocado, and dairy-free cheddar cheese shreds.
- Fold tortilla up “burrito-style” and slice in half (if desired). Enjoy!
- OPTIONAL: Add hot sauce or salsa for a little extra kick!
